It’s August! It’s August! We still have a month left of summer vacation, but the start of school is in sight. I’m hoping this will be a great month. It’s full of birthdays and the boys are both excited about that. There are county fairs galore. The boys have swimming lessons scheduled. There are peaches and raspberries to pick and jams and butters to make.  And I finally will have my endo appointment for my thyroid. No, that last one doesn’t sound as fun as everything else, but once I start medication it will be a load off of my mind, so that is a good thing.

The weather this week shouldn’t be as insanely hot and humid as it’s been, but I’m still trying to consolidate cooking as much as possible. Yesterday Drew made a marinara sauce, so we took out two packages of meatballs from the freezer. One we ate last night, the other we’ll have with the leftover sauce later this week in the form of grinders. I’m also going to make a big batch of beans in the Crock Pot to use in both the taco salad and with the BBQ ribs.

Yesterday at the Rhinebeck Farmer’s Market I bought some adorable baby squash. I can’t wait to eat those up tonight! I also bought a mixed basket of hot peppers, so I think some of those will be used with the taco salad, and maybe whatever I make on Saturday.

iggy’s!

After hearing my parents and my brother talk about Iggy’s down in Narragansett, RI, I finally got to experience it for myself this week! Oh boy, do they hook you up with some good eats. Good think I’m not concerned about my weight at the moment or xyphedrine side effects — no, no diet pills here. Especially not when you’re heading down to the ocean for some deep-fried deliciousness! My brother likes to get the Iggy Burger, a special with fried onions and peppers. I decided to get fish and chips, since that’s something I don’t have very often. Look at the size! This was quite the lunch:

You can see a little bit of the clam chowder he ordered, but I didn’t take a picture of the clam cakes. The chowder was to die for. Laura could not get enough of it. The clam cakes were really good too, but they were more like fritters — doughy and soft. I imagined they’d be more like a crab cake and that was not the case.

We got there shortly after they opened. Our order was 21. Shortly after we dived into our lunch, they were already calling for order 46! Yes, this place is hopping, and apparently the line often stretches down the street. I’d love to go back, but definitely during the off-season, or first thing when they open again. The food was really yummy, but I’m not sure I’d wait in a long line for it, LOL!

I should remember to always take appetite suppressants before visiting my parents — I am fed all too well! Last night we enjoyed dinner with my brother, his wife, and my sweet niece and I stuffed myself full of lasagne, salad, and cake. Oh yes — carb overload! Well, at least there was salad, right? It was nice not having to cook, too 🙂 Laura and E. were so funny together. They are a few months apart, but Laura is actually smaller than her younger cousin. I can just tell they’re going to be trouble together. And then when you factor in my cousin’s little girl, well… we’ll have quite the trio on our hands!

I can’t believe it’s only mid-July. Is this summer dragging for anyone else? The boys haven’t even been out of school for a full month, yet it seems like so much longer than that. I know I’ve complained about it ad nauseum, but the heat and humidity is not doing much to make things pleasant. The kids are constantly covered in sweat, and poor Noah has little pimples because he won’t let me wash it every 10 minutes like I want to. He’s not even five yet. Do I really need to check out the best acne treatments that CVS has to offer? Tomorrow they’ll get a break at the lake, and they’ve enjoyed the splash pool and our slip & slide here in the yard. But it would be nice to do some outside activities in some nicer weather.

Next week is scheduled to be outrageously hot, too. At Cub Scout Camp Jake will have time in the lake every day, but I’ll have to think of something else for Noah. They had openings for the library mini-camp, so for three afternoons he’ll do that, since he’s having such a great time this week at the week-long camp.

I’m also running out of hot-weather recipes. How many grilled chicken salads can one eat? I’m inexplicably craving foods like meatloaf and split-pea soup, but they’re not exactly summer foods. (And no, don’t even think that the cravings indicate anything besides just that — cravings, LOL! Just trust me on that one!) Maybe I’ll splurge on some shrimp this weekend. I need to get out of this cooking rut!

DSC_0176On our honeymoon in Bordeaux, every morning we were greeting with a wonderfully simple breakfast spread. I enjoyed the best coffee, yogurt, and croissants I’d ever had. And let’s not forget the wonderful cherry preserves! Oh, they were the best. I was in love with these preserves, so when we picked all those sour cherries last week, making some of my own preserves topped my canning list.

The process of making jams and preserves is quite simple, actually. It only requires a few ingredients: fruit, pectin, and sugar. If you’re anything like me, you’ll be shocked at how much sugar you need to use. But then you’ll realize that it’s still got to be a little better than most of the stuff at the grocery store. For these preserves, I used a “no sugar pectin” — it doesn’t require as much sugar to create that thick, sticky consistency you desire in a product you’ll be slathering on toast. I used about five cups of pitted cherries and a scant three cups of sugar.

As you can see, the process takes up a lot of room on your stove:

Next, it’s time to fill the jars. Be careful because everything is super hot.

When all was said and done I had enough preserves for five half-pint jars (which I processed in the water bath canner) and a little less than half a pint, so I just put that in an extra jar (not shown in this picture) and stuck in it my fridge.

The preserves came out delicious, if I do say so myself. Cutting back on the sugar made a big difference; the taste of the fruit really comes through! Saturday night I finished off the rest of the cherries and I made one jar of pickled cherries, two jars of cocktail cherries (one using brandy and one using a mixture of brandy and amaretto), and one quart and one pint of just regular old preserved cherries for baking. It was a lot of work, but I think that come November, December, or January I’ll be appreciating it!

It’s crazy to think that Laura is going to be one (one!) on Thursday. She’s such a peanut; she still rides in her infant carrier, LOL! But she’s incredibly strong. The grip on this kid is something else.

So I’ve gone back and forth about 10 times on what to serve at her party and I think I’ve finally decided on chicken Parmesan, ziti, and salad. Of course we’ll have plenty of apps on hand, too. But I can make the ziti the night before and heat it in the oven while the chicken parm is baking. Yes, I think that will simplify things immensely.

I think I’m going to bake this chocolate covered strawberry cake for dessert, except I’ll alternate layers of chocolate and strawberry cake. My goal at every party we host is to have lots of delicious food. If our guests feel like they have to look into the best fat burner when they leave… well, then I’ve done my job 🙂

I just hope the weather holds out. I’d rather the kids play outside, so let’s hope that any thunder storms will hold off until the end of the party.

My big successes last week were the chicken vindaloo and the black bean soup (which I made again for lunch today). I haven’t posted the soup recipe because I’m trying to get it perfect. It’s pretty close, though! The pork chops didn’t happen because the meat looked off. (Why do I buy pork chops? We don’t even like them all that much.) Spaghetti and meatballs turned into chicken marsala on a whim, and it was so yummy. Laura devoured the chicken and mushrooms! The whole wheat buns were a huge disaster since I had the wrong type of flour. The backyard birds ate well that night! Luckily I had a package of store-bought buns handy. And shrimp skewers didn’t happen. Noah wanted cereal and the rest of us ate grilled chicken sandwiches.

On to this week. I’ve got a huge package of chicken drumsticks in the freezer so I think I’ll pull that out and make a big batch of stock. I’m looking forward to the short ribs, but I think I’m the only one! We have a lot going on this week, so my meals are pretty straightforward. I also did a little freezer cooking over the weekend so if necessary I can pull something out at a moment’s notice. But here’s what I’m thinking about:

Sunday: Pizza and salad
Monday: Cheese ravioli, marinara (from the freezer), salad
Tuesday: Taco ring (made with ground chicken) with lettuce, tomatoes, olives, pico de gallo and guacamole
Wednesday: Cabernet braised short ribs, mashed potatoes, steamed vegetables
Thursday: Homemade chicken soup and sandwiches
Friday: Grilled turkey burgers, chips, cole slaw
Saturday: Not sure yet

so long, restaurants (for a while…)

slow cooker chicken vindaloo If you know my family, you know that we enjoy eating out at restaurants. There are a lot of great places around here, from chains to hole-in-the-wall diners. But as I mentioned in my previous post, Laura is entering a rather, um… difficult phase. Last night we ended up at Friendly’s because the pork I’d thawed looked suspicious and quite honestly, Drew and I were restless and felt like doing something. She wasn’t happy with the applesauce I’d brought for her, grew tired of fries after a while and wanted little to do with a roll. I was mortified as she threw things on the floor and immediately I was cleaning up after her. (I can’t understand mothers or fathers who leave messes on the floor for the waitstaff to clean up — at least make an effort!)

So, we’re cutting back on our restaurant visits, which is fine. We’ll save some money and calories in the process I’m sure! I’m thinking about doing another freezer cooking day like I did back in February. It would be helpful to have some dinner kits prepared, some taco meat ready to go, and burger patties made up for quick dinners (and so we’re not left scrambling the next time I take a chance on marked-down meat). Maybe I’ll plan it for the beginning of June when several of the other blogs I read do their freezer cooking. I need to prepare for the big day, LOL!

While we were out we checked out new microwaves. Ours is probably seven or eight years old and it’s pretty tired. We’re considering splurging on an over-the-stove model. Our range hood isn’t the greatest and I’d love the extra counter space we’d gain by moving the microwave up. We checked out several models from name brands like Samsung to generic store brands and have an idea of what we’re going to go with. And then, as if by magic, we got a coupon for Lowe’s in the mail! Don’t you love when things like that happen?

Going back to cooking, I’m changing up tonight’s meal plan as well. I had a craving for chicken marsala, so I’m making that along with linguine, roasted asparagus, and I’m about to bake up some artisan bread to go with it all. I’m hungry just thinking about it! What are you having tonight?

Oh it’s been a while hasn’t it? I guess that’s my MO with this feature. My interest in posting weekly menus ebbs and flows. I always have something scribbled down, but for some reason when I post it on my blog I stick to the menu more often than not, so… here we go! I am back on Artisan Bread in 5 Minutes a Day. Friday I mixed up a batch of dough and Saturday we enjoyed it with grilled chicken salads when my friend was visiting. I think it will be perfect with the soup I’m planning for tonight.  (It’s going to be a chilly week.) I’m also making a big crock of applesauce today, and that will be perfect with Wednesday’s pork chops. Here’s what I’m thinking about:

Monday: Black bean soup (recipe to come), salad, bread

Tuesday: Slow cooker chicken vindaloo, rice

Wednesday:  Rosemary & garlic pork loin chops, applesauce, egg noodles, green beans

Thursday: Spaghetti and meatballs with marinara (from the freezer), green salad, bread

Friday: Sloppy joes or pub burgers on whole wheat buns, baked french fries, cole slaw

Saturday: Cajun spiced grilled shrimp and scallop skewers (recipe to come) over rice pilaf, broccoli

Between the May issue of Everyday Food, the May issue of simple & delicious, and my new copycat cookbook, I have so many recipes I can’t wait to try. I needed the inspiration and I can’t wait to get cooking!

happy mother’s day!

I hope that all of you moms, grandmothers, godmothers, mothers at heart and heck — anyone who has a mom enjoyed a beautiful Mother’s Day yesterday. I know I did! Laura needs a better understanding of the day, though. Apparently she just wanted to be with me so much that she wouldn’t really sleep unless I was holding her the night before, LOL. Luckily I’ve learned to sleep in the chair in her room. Plus, I got to sleep in yesterday morning to a blissful 7:10. It was wonderful! When I came downstairs, a big mug of tea was ready for me and a bunch of cards and presents were on the kitchen table. Oh, my sweet boys!

Noah had given me his card and an impatien plant after nursery school on Friday. Jake made me a wonderful card in computer class at school. The kids must have been instructed to write about something they love about their mom on the inside of the card. He declared that he loves when I make my homemade pizza 🙂 He also gave me a little coupon book to cash in for chores (and kisses). From all the kiddos I got a planter they’d made they day before at Lowe’s, a copycat restaurant recipe cookbook (with so many amazing-sounding recipes in it — stay tuned for these!) and a Phish CD I don’t have (that D. found at Dollar Tree of all places)! Drew also gave me a beautiful card and the boys picked out another one together.

But the really shocker was this big box everything else had been sitting on top of, or in front of: a Keurig!!! I’d mentioned that I was saving up my Amazon gift cards from Swagbucks for one. D. found an amazing deal last week and wanted to surprise me. Well, surprise me he did! And yes, the coffee is totally amazing. So much better than anything I’ve made in quite some time.

After a yummy breakfast of eggs, toast, and delicious coffee, we got ready and went to opening day of the Rhinebeck Farmer’s Market. We picked up a sourdough baguette, garlic-rosemary goat cheese, dill pickles, and pickled eggs. Moms also got free seedlings, so each of the boys chose a snapdragon for me. It was very cold yesterday, so we didn’t stay long.

We came back home and D.’s mom, aunt, and brother came up for a visit. We enjoyed a yummy lunch of grilled chicken, sweet potatoes, cole slaw, pinot noir and cheesecake.

The power went out halfway through the time needed for the potatoes to bake, so I threw them on the grill for the rest of the time and they came out so much better! I know how I’ll be cooking them for the rest of the summer.

My brother-in-law brought me some of my favorite cupcakes that his girlfriend had sent for me. Oh, Crumbs… so delicious!

All in all it was just a wonderful day with my family. The only way it could have been better is if I’d seen my mom too (though I talked to her first thing in the morning). I wish I’d remember to take more photos. Sometimes I see people put slide shows on their blogs to show their pictures. But a few is better than none, right?

Anyway, now it’s back to the daily grind. I have to say that my week is off to a pretty great start, though!
