{Recipe} Roasted Butternut Squash Soup

To me, fall is all about squash. Spaghetti squash, acorn squash, and especially butternut squash. I enjoy it prepared pretty much any way possible, but my “go to” recipe is for a soup that is simple enough to whip up for lunch whenever I have a craving (so long as I have a fresh squash on hand, that is). I like to pair the soup with a salad consisting of greens, goat cheese, cranberries, walnuts or sunflower seeds, and honey balsamic dressing.

 

Roasted Butternut Squash Soup

1 medium butternut squash
1 medium onion, peeled and quartered
2-3 cloves of garlic, peeled
3 c. chicken broth
1/2 tsp. curry powder
1/2 tsp. pumpkin pie spice
salt, pepper, olive oil
sour cream

Preheat oven to 400 degrees. Cut squash in half and discard seeds (or save and roast them if you’re ambitious). Drizzle flesh with olive oil and sprinkle on some salt or pepper if you feel like it. Place the squash face-down on a foil-lined baking pan or cookie sheet along with the onion quarters and garlic cloves (which you should also drizzle with olive oil). Roast for about 40 min. or until the squash is soft.

Transfer the roasted vegetables to a medium saucepan and add the chicken broth, curry powder, and pumpkin pie spice. Bring to a boil, then reduce heat. Allow the soup to simmer for about 15 minutes, then puree with an immersion blender or in your food processor. Add salt and pepper to taste. Serve with a dollop of sour cream.

The sour cream is optional, of course, but I really feel like it gives the soup a delicious tang. If I have chopped walnuts on hand, I like to add those to the soup as well. I know, it sounds a little strange, but they add a delicious crunch in a soup that lacks a lot of texture.

Autumn’s Chill

Last day of summer break. Clearly, fall is knocking on the door.

I took this photo a month ago, at the beginning of Septemeber, when the chill of autumn still seemed so far away. Laura and I were just playing outside and my goodness… there’s a briskness out there letting us know that fall is here… there’s no going back.

Stock up the firewood, brew a pot of cider, and start looking for a cozy fleece people who are cold all the time (like me) would love to have for their upcoming birthday 😉 Tomorrow’s low is supposed to dip down into the 20s. The 20s! Guess I really need to start clearing out the garden. Of course, the deer have helped themselves to plenty of flowers and leaves.

That actually makes me think that it really is going to be a tough winter. Last fall, the deer were barely noticeable. This year I’m seeing them everywhere and yes, as I mentioned, they’re wreaking absolute havoc on my plants. The squirrels and chipmunks are going crazy, too. Definitely makes me wonder.

{Recipe} Rustic Apple Crisp

I don’t know when I started making apple crisp. It wasn’t something I grew up with, so my best guess is that I found a recipe while I was in college and decided to try it. Yesterday, one of my college roommates actually brought up my apple crisp recipe on a food-related Facebook post, and I decided that I needed to make it.

Only, when I dug out the recipe I decided that it was time to change things up a bit and make it a wee bit healthier. I’m not going to lie: it’s a little bit time-consuming. But think of all the apple-slicing and butter-cutting as a sort of meditation time. I find it oddly therapeutic when I’m stressed or upset or angry to just take out my frustrations with some good old-fashioned slicing and dicing.

But I digress… Ahem.

I’m not saying that this is a super-healthy recipe, but I cut the amount of sugar in half, I reduced the amount of butter, and I switched out the type of flour. And I couldn’t even tell the difference! So go ahead… while everyone else is making the pumpkin desserts, you bring this baby to the table and see how fast it disappears.

Rustic Apple Crisp

4 c. sliced apples
1/4 c. water
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. sugar
3/4 c. sifted white whole wheat flour
4 Tbsp. softened butter (half a stick)

Pre-heat the oven to 350 degrees. Spread the apples in an even layer over the bottom of an 8×8 square pan. Combine the water, cinnamon, and salt and sprinkle over the apples. Combine the flour and sugar and use a fork or pastry blender to work in the softened butter until the mixture is crumbly. Spread the crumbs over the apples and bake uncovered for about 40 minutes.

I like to add vanilla ice cream or whipped cream on the top. I bet you will, too!

Oh, Deer…

Stupid deer

We moved up here for many reasons, not the least of them being the charming country life. Need some equestrian apparel? No problem! There’s a tack shop right in town. Want to visit a farm? Just drive down the road. And at first I thought some of our forest friends were adorable, too. But oh, how things change.

I used to like deer. They were so graceful and peaceful looking. Or so I thought. Now I know that they are destructive, tick-carrying forest rats. They make me wonder why I even bother trying to put out plants. They ruin everything. Everything! Just look what they did to my mum last night. I have a matching plant on the other side of that stair and they ate every freaking flower off of it, then knocked it over.

Too bad I don’t care for venison.

On a Chilly Monday

Good morning, everyone! I hope you had a great weekend. Mine was the perfect balance of “stuff to do” and “being lazy.” And it’s a three-day weekend, so I’m still not into the groove of things yet. Here’s what it’s looking like today!

The Weather::: I’m so chilly today! I’m wearing jeans, a tee-shirt, and a cozy sweater and I’m still a bit shivery! It’s only about 45 out there right now, but I refuse to turn on the heat just yet. Heck, I’m even holding off on the wood stove for as long as I can. We’ve got plenty of sweaters, sweatshirts, and blankets, LOL… Make due!

Right now I am::: Waiting for some laundry to dry so I can fold it and put it away (oh yay!). I am also already hungry for lunch, even though it’s too early! I’ve been craving butternut squash soup and I just can’t wait.

Thinking::: About why I am still achy in the two molars I had filled nearly two weeks ago. It’s a little better, but they are still so sensitive. I’ll give it a couple more days, but I might have to call the dentist to see if this is normal.

On my reading pile::: I picked up two books at the library this week: Food Rules, An Eater’s Manual by Michael Pollan and Food Heroes: 16 Culinary Artisans Preserving Tradition by Georgia Pellegrini.

The Walking Dead ~ Season 2
Plus, I’m thinking of finally starting Once Upon a Time and Revenge. We’ll finish up Walking Dead tonight, and goodness — what a disappointing season. The inconsistencies, the continuity errors, the way the writers just  d r a g   t h i n g s   o u t… Ugh. It drives me crazy. I hate lazy writing and special effects that are just for shock value. They could tell this story in a much more compelling way. (But then I guess it wouldn’t get the ratings. Sorry, end of my rant!)

On the menu for this week:::
M: Whole wheat pasta with broccoli, zucchini, tomatoes, garlic, and onions, tossed with olive oil and Parmesan cheese
T: Chicken Cordon Bleu, roasted red potatoes, salad

~ Banking

~ Finish up the laundry
~ Fall cleanup outside (pruning roses, cleaning up my plants, etc.)
~ Hem jeans for the boys (I swear I have to hem them 3-4 inches and my guys are average weight and a little on the tall side — what is up with clothing sizing???)

What I am sewing, crocheting, knitting or creating::: Just working on Noah’s checkerboard pillow this week.

Homemaking Tips::: Chopping garlic and you don’t want that smell on your hands? Immediately after you’re done, wash your hands in cold water while rubbing something that’s stainless steel (I usually use a spoon, or even the faucet head if I’m super lazy.) It helps take the smell away!

Looking around the house::: It’s loud and noisy and messy here today. Kids are off from school for Columbus Day and I was pretty lazy over the weekend, so now I have to deal with that.

I love this rusty old lantern I bought over the summer! I had an apple cider candle burning yesterday and I thought it looked so pretty and seasonal.

Healthy Eyes, Smart Kids


 

When I was a sophomore in high school, I noticed that my vision started to get a little fuzzy. My mom brought me to the optometrist and sure enough… I needed glasses. The prescription wasn’t particularly strong, but wearing them made a huge difference.

Flash forward several years… now I’m married to a wonderful guy who unfortunately has very poor eye sight and can’t see much without his glasses. Because of this, we are very sensitive to our children’s eye health. We make sure they have an annual eye exam with an eye doctor because even though, yes, schools do vision screenings, they do not provide the same level of detection as comprehensive eye exams. Annual eye exams – such as the VSP Vision Care WellVision Exam® allow VSP eye doctors to detect early signs of health conditions such as diabetes, high blood pressure, and high cholesterol, among others.

This year we thought Noah might need glasses because he’d been complaining of headaches and rubbing his eyes (two signs that there might be a problem). We were surprised (pleasantly so) to learn that his vision is totally fine. But I can’t imagine not following up on what could be tell-tale signs that your child needs glasses.

What else should parents look for? Here are a few things:

  • squinting
  • head tilting
  • avoiding “close work”
  • trouble focusing

One  in four children have an undetected vision condition that can negatively impact learning.

Jake’s vision is almost super-hero good. In fact, the doctor remarked that she was impressed how quickly his focus adjusts and this is probably one of the reasons he’s such a good reader — his eyes can glide along the page from word to word with very little effort.

My exam went well too and my prescription did change slightly so I got a pair of new glasses (which I probably would have gotten even if my prescription remained the same). My new specs have a funky tiger strip on the inside, which I love!

Chances are, all of our kids will need glasses at some point though, so we will continue to “watch” how well they see. And now that most children have been in school for a while, it’s important to make sure they can see the board without trouble and they’re not having trouble with their schoolwork.

Good eyesight is integral to successful learning — 80 percent of what we learn is through our eyes! Goodness, I just can’t imagine going through life without the gift of sight. Do you take your kids for annual eye exams?

Oh, I just can’t believe it’s October already! I love this month… the mostly cool days, the Indian Summer that always seems to happen in the northeast, pumpkins, Halloween, my birthday (ahem). It’s just a wonderful time of year in the most wonderful part of the country!

Since I’ve got lots of bits and pieces to write about today, I thought I’d join on in with Happy Homemaker Monday, hosted by Sandra at Diary of a SAHM.

The Weather::: It’s currently sunny and 61 degrees. It doesn’t get better than that, if you ask me! Later this week it’s supposed to get up into the mid-70s, and that’s not really anything to complain about either. Before you know it, winter will be here, so I’ll soak up the mild temps while I can.

Right now I am::: Sitting at the kitchen island waiting for the boys to come home from school.

Thinking::: Lots of different things racing through my mind (all good things, incidentally): craft projects, Thanksgiving menu (yes I really am already thinking about it), my “to-do” list for the week…

On my reading pile::: Nothing at the moment, though I am sure my stack will be overflowing soon because I just started working part-time at our local library! I am so super excited about it! I love my library, loved working at a library in high school, and at one point wanted to make it my career. Right now it is very (VERY) part time, but who knows? Anyway, I get to see so many great books come in and out. I’m going to have to start reading faster.

On my tv:::
~ Weeds, Season 7
~ Walking Dead, Season 2
(We don’t have cable or satellite, just Netflix). Neither of these are “wowing” me. Weeds has just gotten dumb, and the inconsistancies in the Walking Dead make me crazy! But they’re still entertaining enough.

On the menu for this week:::
M: Omelettes & salad
T: Lemon chicken, steamed broccoli, quinoa
W: Turkey tacos
Th: Root beer pulled pork (Crock Pot), mac & cheese, green beans, salad
F: Soup and sandwiches/salad
S: Pizza Night! Not sure if it will be homemade or take-out…

On my to do list:::
~ Organize all of my Cub Scout paperwork in a binder
~ Wash the floors
~ Drop off donations at Goodwill
(You will notice that for once laundry is NOT on this list – yay!)

What I am sewing, crocheting, knitting or creating::: I’m making a checkerboard cushion for Noah’s bed right now. I will immediately follow that up with a similar cushion for Jake’s bed! And I’m working on some 4-panel welding beanies for my dad.

Homemaking Tips::: Use Dawn as a pre-treater to help remove just about any stain. If you get it right away, it almost always comes out!

Looking around the house:::  Lunch boxes and school notes on the counter, a stuffed animal “party” in the den, lazy late afternoon sunlight through my kitchen window.
