What’s Cooking, Baby?

It’s that time of the week! Yes, it’s Sandra‘s Slow Cooking Thursday. I love this meme because it’s really gotten me using my Crock-Pot again, plus I’ve tried some new recipes. My recipe for this week is simmering as I type. I’m actually cooking it to have some healthy meals in the freezer. I hate when Drew or I need to take a meal to work, but we’re either too tired or lazy to make it. So I bought some small freezer containers (enough for one portion), and I’ll divide up my stew, freeze it, and have it handy for a quick meal. Just heat and eat! Easy, peasy. So here you go. Enjoy!

Zesty Beef & Bean Stew
1 lb lean beef stew meat, cut into 1-inch cubes
1 can (16 oz.) kidney beans
1 can (16 oz.) black beans
1 can (14.5 oz) tomatoes with chiles (or 1 can of diced tomatoes and 1 small can diced chiles)
1 can (2.25 oz) sliced ripe olives, drained (I used a can slightly larger)
1.5 cups frozen corn
1 cup hot water
1 cup chopped onion
2 celery stalks, chopped
** 1 small zucchini, chopped
** 1 small yellow squash, chopped
1-2 Tbsp. chili powder
2 beef bouillon cubes, crumbled
1/4 tsp. salt
** I also add Adobo seasoning and Mexican seasoning
1 can (8 oz) tomato sauce
Shredded cheese, sour cream, scallions (optional)

In a 5-qt. slow cooker, combine the first 13 ingredients. Cover and cook on low for 8-9 hours or until beef is tender. Stir in tomato sauce; cover and cook for 30 minutes or until heated through. Garnish with cheese, sour cream, and scallions if desired. Yield: 10 servings
** Now, I’ve adapted this a little from the original recipe which doesn’t call for the squash and zucchini, and adds rice to the stew. If you want to add rice, add 2 Tbsp. uncooked long grain rice. Here is the nutrition information for the original recipe (which includes the rice and does not include the starred items in the ingredient list). So at least you have an idea.

Nutrition: 1 cup (using reduced-sodium bouillion, calculated without cheese and sour cream) = 209 cal; 4 g fat (1 g saturated fat); 28 mg cholesterol; 558 mg sodium; 28 g carbohydrate; 7 g fiber; 17 g protein

It’s slow-cooker Thursday, hosted by Sandra! I’m about to heat this up for today’s lunch, actually. I made it yesterday and Noah couldn’t get enough of it for dinner. In fact, Jake had a bowl of this soup in addition to his spaghetti and sausage, so it’s obviously kid-friendly. It’s also possibly the easiest chicken soup I’ve ever made. I had my doubts, I’ll admit. I usually do the whole thing — make my own stock with the chicken carcass and veggies, strain it, chop up fresh veggies, et cetera. I wasn’t sure how this would compare, but it is really good. I found the recipe in a new slow-cooker cookbook I bought over the weekend. I’ll also keep it posted on my cooking blog. Enjoy!

Chicken & Wild Rice Soup

1 cup diced carrots
1 cup diced celery
1/2 cup diced onion
1 lb diced boneless, skinless chicken breasts
1 package (6 oz) of long grain and wild rice mix with seasoning packet
3 cups chicken broth
2 cups water
1 tbsp. parsley
black pepper

Combine everything in your Crock Pot. Cook on low all day.

Christmas Recovery

Whew… what a whirlwind of an extended weekend! Our Christmas was very nice. The boys were completely spoiled by their grandparents (we took a low-key approach to gifts this year – one big gift for the two boys and a few little gifts – Jake got a Play-Dough set, some action figures, overalls; Noah got an AquaDoodle and an AquaDoodle roller, a toy cell phone, and they both got movies to share). Drew loved his gift from me, which was a much needed new MP3 player. I also got him the kit that allows you to listen to it through your car’s speakers, the Tom Waits 3-CD set, and the still-unfinished Irish Hiking Scarf. He gave me a ball winder (yay!), a necklace, a comfy pair of felt clogs with embroidered flowers), some candy, and some goofy temporary tatoos (because I keep saying I’m going to get a real one someday), and few other little things. The huge, big, suprise gift though blew me away (and it’s for everyone): in February we’re going on vacation to Woodloch Pines Resort in the Poconos! It’s a family resort and all-inclusive. Kind of like a cruise on land! I was so surprised. Months ago we threw around the idea of going back to Disney in February, but then scrapped it because we thought it would be too hard with Noah right now (he refuses his stroller 9 times out of 10). So this will be awesome!

In the meantime, the boys are also enjoying toys from their grandparents, who, as I said, spoiled them rotten. Jake’s favorites are a Leapster L-Max from his grandma (he seems to like it, though honestly I really didn’t want him to have anything like this already — it’s just a gateway to other video game things), and two sets of Magtastik toys from Babci & Dziadziu (magnetic building materials which he LOVES). Noah loves his LeapFrog Alphabet Train set from Babci & Dziadziu as well as the TMX Elmo (which I have to admit makes me laugh, too).

Dinner was lovely and I’m officially sick of spinach strata. This morning I made some ham salad to use up the rest of the ham. Otherwise I sent leftover home with everyone. Today I’m trying to make sense of the house and organize and clean. I’m so ready to take all the decorations down. I also need to put the dates into my new 2007 calendar. We have nothing planned for New Year’s Eve. I might make fajitas or something fun like that. We’ll see; I have time to decide. Lunchtime now! Hope you all had wonderful holidays as well!

Coffee Break

OK, this update really is more for my reference (because there’s no chance I’ll spill something on my laptop — notes on paper, however, are another story).

Done:

Last-mintue grocery shopping
Slice French bread for strata (needs to be stale)

Make herbed cream cheese

Bring up/clean coffee maker

To Do Today:

Get out serving dishes
Set up buffet (tablecloth, silverware, plates, etc.)
Finish laundry
Wash kitchen floor
Vacuum
Take spinach out of freezer
Frost cake (can actually be done anytime before brunch)
Try to finish scarf (ha! yeah, right)

To Do Tomorrow:

Prep strata (needs to set overnight)
Bake rolls for appetizer wreath
Charge batteries for camera/video camera

Christmas Morning:

Chill Prosecco
Chop apples for and make Caramelized Squash & Apples (Decided I need a “real” veg — I took the easy way out and bought the pre-peeled/pre-chopped squash though)
Make green salad
Make fruit salad
Make hash browns
Bake ham
Bake strata
Assemble appetizer wreath

I think that’s it. I should probably add “drink heavily” to each day’s list, shouldn’t I? πŸ˜‰

On the Menu

So, I think this is what I’ll be serving for Christmas Brunch:

  • Spiral Ham
  • Spinach and Gruyere Strata
  • Pear Salad with Cranberries and Chevre
  • O’Brian Potatoes
  • Cresent Roll Christmas Wreath
  • Holiday Funfetti Cake — requested and made by Jake (with a little help from me)
  • Fresh fruit — still not sure about this; the one salad might be enough

Yes, I am having ham. Some of you might remember that I made a ham the Christmas when I was newly-pregnant with Noah (and NO I am NOT pregnant again, trust me!) and the leftovers became a terrible food aversion. So much, in fact, that I’m still a little unsure about making it. However, it’s so easy to prepare (I mean, you can’t get easier than “stick the thing in the oven”) and it is very brunchy. The strata is a little bit involved, but it was such a hit last year that I want to make it a Christmas tradition. As for the cresent roll wreath? I was looking through some old cooking magazines and found the recipe in an issue of Taste of Home. You bake up the rolls, let them cool, make a yummy cream cheese mixture, spread it on top of the rolls and then arrange broccoli, celery, and sweet red pepper. It looks so pretty and sounds yummy! If I make it I’ll be sure to take a photo.

Jake and I made the most amazing mint-chocolate brownies today. Basically, we just doctored up boxed brownie mix by chopping up some York Peppermint Patties (I obviously did that part) and stirred them into the mix. Awesome! Unfortunately the brownies are for after Jake’s preschool’s holiday show tomorrow. Well, fortunate for everyone who goes, but unfortunate that they’re not just for us. I will be making these again though! And I might be able to sneak one (just a tiny one) later on to have as a bedtime snack with a cup of tea πŸ˜‰

The Disorganized Party Planner

I love planning parties. I really do. But I just feel like we didn’t have enough time to think about this wine tasting party we’re having on Sunday, and I’m throwing it together without as much thought as I usually put into things. Luckily, it’s going to be very low-fi. There are only 7 adults (including Drew and myself) and 4 kids, so I’m not too worried. I just wanted to come up with a more creative menu, but I’m sure this will be fine:

Vegetable Spring Rolls (from Sam’s Club)
Mini Quiches (from Sam’s Club)
Roast beef on crostini, dab of horseradish
Fruit, cheese, and cracker platter

I just need to think of a couple fun, kid-oriented appetizers. Maybe pigs in a blanket? (At the end of August I remember reading an article in the NY Times that said they were incredibly popular at posh cocktail parties this summer, ha!) I think I might make a small batch of punch and buy a container of sherbet for the kids’ “cocktails.” I think it would be fun to have this little scoop of sherbet melting in their cup.

As for the wines, I think we might do the Hayman & Hill Cabernet Sauvignon as well as their Chardonnay. We are huge fans of both. Typically, I don’t love chardonnay, but theirs… well, I’m sure I could kick a bottle of it pretty easily. Over the weekend we tried the Duo Cabernet-Merlot blend. It was decent, but I wasn’t in love with it. It is also the first wine that I was able to describe as having “a hint of beet.” Seriously! Not in a bad way, but it had this earthy/sweetness thing and Drew and I were throwing around thoughts and suddenly I just looked at him and said, “Beet. It’s beet!” And he was like, “Holy crap, you’re right!” That was kind of funny. Anyway, we won’t be tasting people on that. Again, not bad, but for the price point there are plenty of other Chilean wines I’d rather drink. We need at least one more wine. I think Drew had a couple ideas, but I don’t remember what they were. So I guess in all reality I’m not that ill-prepared. But I feel like I am.

Brr!

No wonder everyone is getting sick, the weather did a complete 180-degree turn. Earlier this week is was in the high 60s, and today it certainly feels much more like December — chilly and very windy.

I had planned on buying and writing out my Christmas cards today, but I couldn’t find any cards at Walmart (WTF?), and I just was not going to brave Target and the mall. But I did get some good grocery shopping done. The boys have been devouring clementines all afternoon (only $4.99/box!), and I bought some chicken cutlets with which I’ll make chicken piccata tomorrow. We had a bottle of Rabbit Ridge sauvignon blanc, and while it was not fantastic for drinking, it’ll be fine for cooking. I haven’t made that dish in months, and it’s a family favorite, so I’m looking forward to that. While we were grocery shopping at Walmart, Santa Claus made an appearance (“See”, I told Jake, “He knew you were shopping with mommy!”). Heh! Jake asked Santa if he could visit the North Pole. Santa replied, “You’ll have to ask your mom!” Nothing like passing the buck, big guy! They were also doing free photos, but by the time we were ready for check-out and such, the kids were just ready to go, and I don’t think any kind of photo would have turned out well. Still, I thought that was really nice!

We then hit Stop & Shop because Walmart’s produce looked terrible, and it turned out to be a worthwhile detour. They had a bucket with bouquets of roses (10 stems) marked down to $2.99! They might have been a day old, but they looked really good, so I bought two bouquets. I haven’t bought myself fresh flowers in probably two years even though I love having them in the house. (When I lived in Boston, I’d buy myself a bouquet whenever I was having a bad day. There was a woman who sold them at the Davis Square T-stop for, I think $5/dozen. A small price to make yourself feel like a million.) Anyway, they are deep red and gorgeous here in my kitchen.

I should probably go and vaccum the living room. Last night Drew and I moved furniture around to accomade the Christmas tree, and as anyone with little kids can imagine, we unearthed ungodly amounts of old Cheerios, corn flakes, and popcorn kernals. I need to get it all cleaned up before we decorate tomorrow. (Oooh, but then I can reward myself with a Rice Krispie treat, made fresh by Chef Jake earlier this afternoon! Scrummy!)

It’s kind of a lazy Friday over here: quiet, grey, waiting for rain or thunderstorms or some kind of “weather” to make it’s way. We never did put the Christmas decorations up last weekend, so I think that is going to be this weekend’s priority. I also hope to set up the tripod and get a family photo to include with Christmas cards (which means that I should probably go ahead and buy some cards!) My shopping is basically done. There are a couple things I still have to order online, but I’m not stressing out over anyone’s gifts. I am, however, a little stressed that some of the knitting projects I’m working on will be done in time. Yikes! I might be giving people partially complete-projects and I.O.U.’s.

We’re also having just a couple people over on the 10th (people D. works with) for a wine tasting party-type-thing, so I really need to come up with a pairings menu. Nothing crazy, but still. (He should probably let me know what wines he wants to taste first!) Actually, I think one of the wines is going to be this chamomile infused grappa. I know, sounds odd, right? But it’s really quite amazing, and I’m not a grappa drinker or a fan of chamomile. Once I learned the correct way to taste grappa, it made an enormous difference. You can appreciate something, even though you don’t really care for it, if that makes sense.

The Santa Claus photo-op was a semi-success last weekend. J. was incredibly excited this year and we got a great photo of him with the big guy. N., on the other hand, was absolutely terrified as soon as we got near the North Pole set-up. I am not one to take photos of my screaming child with Santa, so J. went up by himself. I know some people think it’s funny and all, but I don’t like it one bit. It’s not that important, you know? I should get some knitting done but I am feeling so lazy today. Maybe another cup of tea will help πŸ™‚

Thanksgiving and Stuff

Man, this has been a crazy day. I’m working today, and as you can imagine it’s been rather crazy. Generally people have been in decent moods; not too snappy at least. From what I hear, though, Balducci’s (across the street) is an absolute madhouse. The day has gone by fast, at least.

So after work I’m heading up to my parents’ house for Thanksgiving weekend. And, just my luck, it’s crappy and raining out. Nothing like a 2+ hour drive in nasty weather. Luck is not on my side this year.

Yesterday I had a great time with Lisanne! Meredith is so tiny! And so sweet! J. absolutely adored her. It was cute to watch our boys all play together. What a difference a year makes! I remember having lunch at her house last December and Luke had started crawling and N. was starting to pull himself up. And yesterday they were running around the house, climbing on the table (OK, that was just my kid, ha! Luke has better manners). I made Loaded Baked Potato Egg Bake, a dish that my husband thinks I should rename because “bake” is in it twice. Whatever — he sure liked the leftovers, though! I just threw it together with things I had in my fridge. It was perfect because I prepped everything and put the dish together in the morning, put it in the fridge, and then baked it when it was lunchtime. Lisanne and I had a lovely visit, as always πŸ™‚

I guess that’s about it. I feel like my blog is so boring these days! I really need to keep up with it a little more often. Man, I remember back in the day I’d write three or four posts a day; now if I write three or four posts a week I’m doing well.
