Yesterday we finished our Thanksgiving leftovers, so unlike many people out there, I’m not scrambling for ideas to use up turkey. In fact, I ended up buying a little more! When I was grocery shopping yesterday, the supermarket must have divided up the rest of their fresh turkeys to sell. I bought a package of two turkey drumsticks for all of 57 cents! I’ll use those to make a little turkey soup during week. I wish I bought another package or two for the freezer, at that price.

All in all a very easy week cooking-wise. Don’t get too excited about the butter chicken. Really, I’m just throwing the meat and vegetables into my Crock Pot with some butter chicken simmer sauce I purchased. I won’t be making that totally from scratch. I hope it will be good. Here’s my plan:

Sunday: Fish sandwiches, french fries, salad
Monday: Slow cooker roast beef, potato salad, carrots, salad
Tuesday: Tacos, rice & beans
Wednesday: Slow cooker butter chicken with peas and cauliflower, rice
Thursday: Turkey soup and sandwiches or leftovers
Friday: Dinner out (hopefully!)
Saturday: not sure yet

menu plan monday, the “haven’t blogged in a week” edition

How did I let all of last week go by without writing anything? Honestly I am not even sure what I was doing, LOL… I didn’t think I was all that busy but the days do go by and sometimes the computer just doesn’t take priority. Well, I am proud to say that I did stick to last week’s meal plan (pretty much). There were a couple minor changes. For example, we just made the cube steaks our usual way (with Dijon mustard), and I didn’t make Cobb salads — we just had sandwiches with the soup. The spiced parsnip soup was OK. Drew liked it better than I did. I’m not a huge fan of the parsnip, but it was a way to use them up. I probably wouldn’t make it again, but I’m glad I tried it. Now, on to this week’s menu:

Sunday: Leftovers
Monday: Chicken Scarpariello with potatoes, tossed salad
Tuesday: Steak, broccoli, tossed salad
Wednesday: Slow cooker turkey and bean chili, tossed salad
Thursday: Chicken fajitas with fresh pico de gallo and guacamole, black beans and rice
Friday: Cheeseburgers, tossed salad, chicken soup
Saturday: Celebrating J’s birthday, so no cooking for me!

Drew is trying to do South Beach again so I’m trying to prepare meals that lend themselves to Phase I pretty easily without having to make something totally different. For example, tonight he just won’t have the potatoes with dinner. On Thursday he’ll skip the rice and use lettuce leaves instead of a tortilla, and no bun on Friday’s burger. I’ll be making my own chicken soup (as usual), so I don’t add any kind of grain until the last minute anyway. Not a very adventurous week, but one that should not meet too many complaints from my peanut gallery. Sometimes that’s important too!

Although I’m making up a menu plan for the week, I’m not sure how closely I will stick with it. My husband’s aunt was admitted to the hospital last night. Without going into details, I’m just not sure what the week will hold as far as being able to cook and eat together, but hopefully things will track on a positive path. So with that, here’s my tentative plan:

Sunday: Cheesesteak sandwiches
Monday: Quesadillas, salad
Tuesday: Meatballs and spaghetti, green salad
Wednesday: Breakfast for dinner: scrambled eggs, pumpkin waffles, bacon
Thursday: Soup & sandwiches or leftovers
Friday: Chicken breasts, CSA veggies, buttered noodles
Saturday: Steak, baked potato, green beans, salad

After a week where I was flying by the seat of my pants, I’m looking forward to a little more structure. I did not create a meal plan last week since for most of the week I wasn’t eating anything besides Jell-O, clear and smooth soups, yogurt, and various other types of mush. Then Jake got sick for much of the week, so there was a lot of quick and easy “no-brainer” kind of meals. He started to feel better over the weekend and Saturday I made a meatloaf, mom-style. That is, no ketchup and no bacon. Until post-college, I didn’t even realize that people did that to meatloaf. No, mom and I make it Italian-style using a mixture of ground beef, ground veal, and ground pork; diced green peppers and onions; Italian spices; and tomato sauce. The boys weren’t exactly thrilled with it, but in order to get to the apple crisp I’d made for dessert, they had to eat their dinner. And they did, however begrudgingly. Last night for a treat we ordered pizza and everyone obviously enjoyed that!

Here’s what I’m thinking about for this week:

Monday: Split pea soup, salad, beer bread
Tuesday: Chicken piccata, pasta salad, steamed squash
Wednesday: Cheese tortellini with ham and peas, arugula salad
Thursday: Turkey burgers, fries, cole slaw
Friday: Chicken fajitas with fresh pico de gallo, black beans and rice
Saturday: Pizza (maybe I’ll try this dough for a change) and wings, salad

I also have a recipe for pumpkin-ginger scones that I’m thinking about making. I’ll let you know if I do and how they turn out!

Menu Planning Monday, on Tuesday

Considering the crummy start to my week, I hope you’ll forgive the late posting of my weekly menu. It all started on Sunday when we realized we didn’t have hot water and our boiler wouldn’t light. Long story short, the fix was relatively easy, but the cost for the part was pricey. I’m just thankful that the plumber we called (who is NOT the plumber who installed the A/C that still isn’t working right) didn’t charge us extra for coming out on a Sunday.

Then I’ve been dealing with an awful company called PayFlex. Each year we put money into a flexible spending account, managed by PayFlex, to use for things like co-pays. I thought we were so organized this year, considering we had a good estimate of costs for Laura’s birth and all the info we needed. Well naturally, they want to make it difficult and were questioning whether these payments were qualified. (Come on — what do you think I’m buying for $500 from an anesthesiologist?) According to their letter, what we had sent them in June should have been sufficient. However, yesterday a CSR told me that an itemized list of services wasn’t acceptable (despite the fact that letter says it is); we had to send an EOB from our insurance. At least he was pleasant to speak with.

This morning I called to find out if there was an actual person I could send this pile of EOBs to (because they can sort it all out). The rep this morning was a total bitch, questioning why I was sending “those.” I tried to stay calm, I really did, because I lost it yesterday. But her attitude was so shitty that I let her haveĀ  it too because she wouldn’t answer my question and kept arguing with me. I finally said, “I would suggest that in these letters you send to your customers that you explicitly state exactly what information you need because as it now stands, the language is vague and misleading.” Maybe I was using words that were too big for her. Yeah, I know that’s mean, but it’s not like I was asking for anything ridiculous. I got so frustrated I just hung up. I think the only other time I’ve done that is about 15 years ago calling in regards to a student loan. These private corporations are out of control. They make things as difficult for you as possible, so you won’t send the information in and they keep your money.

So my week has not been great so far. But I do have a plan, even if it is only a meal plan:

  • Sunday: Pizza
  • Monday: Bacon & eggs
  • Tuesday: Sausage and peppers with roasted potatoes, salad
  • Wednesday: Chicken picatta, orzo, CSA vegetables
  • Thursday: Grilled steak, salad, CSA veggies
  • Friday: Turkey burgers, pasta salad
  • Saturday: I’ll be in WMass with Laura and Noah and I imagine Drew will do something fun w/ Jake.

Quick & Easy Meal Plan

Hey y’all šŸ™‚ (Hee hee hee). We were in North Carolina for a few days so I have lots to blog about from our trip! We got back last night so I’ve been trying to get back into the swing of things. A menu plan was topping my list, but I didn’t want to do anything too ambitious after being lazy for several days, so this week’s meals will be quick & easy!

M: Tacos
T: Hot dogs, potato puffs, veggies
W: Chicken curry, bharta, rice
Th: Ham steaks, potatoes au gratin, veggies
F: Dinner out @ Chili’s (yay for gift cards!)
S: Manicotti, green salad

Week’s Eats

Well, last week’s menu didn’t exactly go off as planned. Monday and Friday we ended up eating out. I didn’t make the soup because we got fewer zucchini and squash from the farm share than I expected. Instead of Buffalo chicken bites I ended up making chicken curry. I did make the quiche, and everyone liked that. I used Swiss chard from our CSA. And instead of burgers on Saturday we grilled the sausages I had planned on using Friday. So it still all worked out. I’m still craving Indian food, but I don’t have any in the works this week. I’ve bookmarked quite a few recipes that call for cardamom pods lately, and I’m not sure where to get them. I suppose I’ll have to check online. Maybe even look at some free online auctions — I might find a good price, who knows? Anyway, let’s see what happens this week.

Monday: Chicken cordon bleu (frozen), green beans, egg noodles
Tuesday: Pepper steak, rice, green beans
Wednesday: Meatballs & sausage, spaghetti, salad
Thursday: Grilled chicken breasts, grilled squash & zucchini, salad

Week’s Eats

Another week, another menu. My problem this week is that there are too many things I want to make. I’ve been finding so many new and delicious-sounding recipes, and I want to try them all but I just can’t do an entire week of new meals — I need to keep some family favorites mixed in there, too. (Otherwise, I think I’d need a good life insurance plan, because the boys would revolt, LOL!) So I’m only trying one (maybe two) new recipes this week.

Sunday: Calzones, grilled squash & zucchini

Tuesday : Buffalo chicken bites, french fries, peas & carrots, salad
