it’s always something

Having kids always keeps you on your toes, doesn’t it? Jake was complaining of a sore throat for the last day or two, but it didn’t seem like anything more than post-nasal drip. It’s that time of year when everyone has the sniffles, after all. Well, yesterday around 3 I got a call from the school nurse. Poor kid’s throat was killing him and he had a fever. Fan-tastic!

Luckily we were able to get an evening appointment at the doctor’s office and sure enough, it was strep. So now we have a prescription for some antibiotic. I’m too lazy to look up the name and unless I read up on it, I really don’t know the difference between the pink stuff in the bottle and something like l-dopa. Our kids are not sick that often (thank goodness), so I am just not familiar with most of the brands. At any rate, it seemed to work right away. He got a good night’s sleep and feel much better today. We’re keeping him home from school tomorrow, too, just to be sure he is past the “contagious” phase.

While he was at the pediatrician’s, the doctor urged us to make an appointment in a few weeks to have our regular physician examine Jake’s tonsils again. A while back we had them examined, but they are still quite large, so it’s time to take another look. So we’ll see what he says. At least the meds are working quick. Strep throat is the worst!

maple walnut scones with blueberries

Last week a friend that I haven’t seen in months came over for a coffee date. I wanted to bake a little something to snack on and decided to go with one a recipe that comes together quick and has been well-received by anyone who has tried it: Bisquick scones. I know, I know. Blasphemy! Well, I’ve made scones the “correct” way and these are just as good (and a lot less work). I hope you enjoy them!

Maple Walnut Scones with Blueberries

2 cups Bisquick
1/2 cup blueberries
1/3 cup chopped pecans
3 tablespoons maple syrup
1/3 cup whipping cream, half and half, or milk
1 egg
About 1 tablespoon milk

Heat oven to 425°F. Spray cookie sheet with cooking spray or use a silicone liner. In medium bowl, stir Bisquick mix, maple syrup, whipping cream and egg until soft dough forms. Stir in pecans and blueberries. Place dough on surface sprinkled with Bisquick mix; gently roll in Bisquick mix to coat. Shape into ball; knead 10 times. Pat dough into 8-inch circle on cookie sheet. Brush dough with milk. Cut into 8 wedges, but do not separate. Bake 12 to 15 minutes or until golden brown; carefully separate wedges. Serve warm.

These are especially delicious with homemade jam, and I bet lemon curd would be yummy, too.

Drew and I have become addicted to Pawn Stars. It’s probably the only show we watch religiously, and I love it! I find the items so interesting and the stories even better. Of course, it cracks me up when someone brings in some ridiculous item and want top dollar for it. I mean, you can ask, “What is cash value?” but at the end of the day, the pawn shop owners have to make a profit, so it’s unrealistic to expect top dollar.

I don’t know of any pawn shops around here. There used to be one in Chicopee, Mass., near where I grew up. In fact, if my parents are to be believed, they pawned their class rings in order to buy tickets to take my brother and I to Mountain Park when we were kids. I wonder if they ever went back for them?

What a cold, rainy day today was! I made a huge pot of chicken curry for dinner (well, for Drew and myself… it’s way too spicy for the boys), and it was the perfect thing on such an evening. If I ate any more, I’d need to start looking for the best fat burner available! I just have no self control when it comes to tasty Indian food.

Of course, I think I might have to sneak a couple M&Ms with my evening cup of tea. I’m totally wiped out. It was a long day and I just finished making up a quick custom bow order so I think chocolate is in order, don’t you?

spiced apples

A couple weeks ago I made some spiced apples and since then I’ve had several requests for the recipe.  Just to let you know, the recipe makes a lot. I successfully halved the original recipe and still had six half-pints. Cutting it down further is not something I’d recommend, so make sure you have people to give jars to if you do not plan on putting them up.
This recipe is adapted from one in the Ball Blue Book of Preserving.

Apple Wedges in Cinnamon Red Hot Syrup
Yield: about 3 pints or 6 half-pints

4 to 5 lbs. apples
3/4 cup sugar
1/4 cup cinnamon red hot candies
1 stick cinnamon
1 1/4 tsp ground cloves
1/2 tsp ground ginger
1 cup water
3/4 cup white vinegar
1/3 cup light corn syrup
1 Tbsp. red food coloring (optional)

Wash, core, and peel apples. Cut apples lengthwise into eighths. (If you are using half-pint jars, you can cut the slices in half again so they are more like chunks.) Put the apples into a bowl containing a mixture of lemon juice and water to prevent darkening. Combine remaining ingredients in a large saucepot and bring slowly to a boil. Drain apple wedges. Pack hot apples into hot jars, leaving 1/2-inch headspace. Ladle hot syrup over apples, leaving 1/2-inch headspace. Remove air bubbles. Adjust two piece caps. Process 15 minuts in a boiling-water canner.

Properly preserved apples may be consumed for up to 12 months after the processing date.

These would make a lovely addition to a Christmas gift basket. You could also package it up with some pretty napkins or fancy-schmancy cheese for a hostess gift. I love them as a side dish with pork or turkey, but I’m sure you can find dozens of ways to use them. Have fun!

Oh, and don’t forget to make a pretty label for your jar.

I am fond of the free printable canning labels at Sweet Preservation. Use your prettiest cursive to write out the name of the goodies in your jar and always include the date so you can make sure you eat up those treats before it’s too late!

menu plan monday, feeling like fall edition

It is finally, really, truly feeling like autumn. The temperatures have cooled down a lot (and it’s been rainy, which — let’s face it — is part of fall). Lately I seem to have a pretty good handle on things, and I’ve been planning my weekly meals, just not posting them. I’m going to try to get back in the habit of it. I’m now using Google Calendar to plan my meals. To tell you the truth: I hate Google as a company and I don’t really trust them, but the calendar is the best free online solution I’ve found so far. I like the interface for Cozi but it is so slow. It just wasn’t working for me. Google Calendar does make it easy and really — if they want to know that I ate spaghetti and meatballs last Friday, they can go for it.

Here is what I’ve got planned for this week:

Sunday: Ham & egg scramble, French toast
Monday: Pulled pork (Crock Pot) cole slaw, mac & cheese
Tuesday: Chicken curry over rice (meatballs and rice for the boys)
Wednesday: Chicken Marsala, pasta salad, broccoli
Thursday: Turkey tacos (from the freezer), black bean salad
Friday: Chili (Crock Pot), corn bread
Saturday: Homemade pizza, salad

rainy friday

I hope you’re staying dry out there! Yes it’s a rainy Friday indeed. We lost power for a few hours, but not long enough to be unbearable. Luckily we haven’t had any flooding, but I heard that the Taconic was flooded in areas, as well as some local roads.

Things are rolling right along here. It’s been a quiet week, which I’ve enjoyed. A friend came over for coffee, I’ve worked on my shawl, and I have done next to no writing (bad, bad, bad). I’m feeling a bit lazy I guess, and clearly that is evident here!

It seems that I’m in a bit of a blogging rut lately. I think about it, but… never really get around to doing it. I’m thinking of maybe doing some shorter entries, or book reviews, or topic-specific posts, or maybe just share a photo or two. Little snippets of my day. It would probably bore you all to death, but maybe it would be enough to get my creative juices flowing. What do you think? What would you be interested in seeing on my blog?
