I love eggs. I just have to say that. I love eggs sooo much! I just made myself a near-perfect omelette for lunch and it made me very happy. The veggies could have sauteed a bit longer, but… it was still quite yummy. Eggs are so overlooked these days, aren’t they? My copy of The Great Book of French Cuisine has an entire chapter on eggs. Forty-two pages of why they are important, the proper cooking methods, and dozens and dozens of egg recipes. This is one more reason why I love the French: they appreciate eggs.
Here’s a joke for you: “Why do the French only eat one egg for breakfast?” Because … one egg is “an oeuf.” Get it? ::cymbals:: Thank you, thank you very much. I’m here ’til Thursday. 😀
Ahh, I should really look into perfecting the art of the omelette. I have had some (like at this French restaurant in London) that are amazing … but mine are always kind of rubbery. Such a nice healthy and yummy concept.
I love eggs, too! I make more of a souffle-type omelette, not the folded over kind. So yummy.
I wish I had bacon in the house right now, because you’ve made me want an omelette RIGHT THIS SECOND!
