Am I the only one who is exhausted when she just looks at this month’s calendar? Whew… In addition to church and school functions, somehow I’ve managed to lump most of my annual doctors’ visits into the next few weeks. (Note to self: next year, let one or two fall into January — a couple extra weeks won’t make a difference.) Anyway, when my schedule is full, menu planning really helps me stay on track. Even if I go off the plan, it’s there for the days I really need it.
This week is looking something like this:
Monday: Steak au poivre, baked potatoes, steamed broccoli, salad
Tuesday: Chicken tika masala, spinach dal, jasmine rice
Wednesday: Turkey tacos, black bean salad
Thursday: Onion soup, salad
Friday: Spicy chicken penne, salad
Saturday: Leftovers or out to eat
