Another Monday

I figured I’d get this up bright and early before I get too busy with my day. I have to be honest with you — I think I might be over the whole Blog365 thing. It is such a chore posting every single day and I while I’m glad it got me back in the habit of blogging, I am not sure I am going to continue with the aggressive posting schedule. I may scale back to three times a week instead of seven.

This week is a busy one. Laura starts a spring volleyball league, Noah has his last high school concert, I have a jam-packed week at work… and I kind of just don’t see the point of posting something just to post.

But, since it is Monday, I will share my meal plan for the week.

Monday: BBQ pulled pork, macaroni & cheese, broccoli

Tuesday: Crock Pot Mediterranean chicken

Wednesday: American chop suey, salad

Thursday: ? Something quick & easy before the concert

Friday: Burgers, oven fries

Saturday: Maybe chicken fajitas or quesadillas?

Sunday: Pot roast, mashed potatoes, broccoli or green beans, salad

Hope you have a great day!

Bake sale goodies

Bake sale goodies

These are my goodies from the bake sale at the library! Our bakers went above and beyond with the donations and it was so hard to choose what to bring home, but I decided on peanut butter brownies, chili chocolate cookies, and pecan bars. (The pecan bars are amazing!!!) Looks like I won’t need to bake desserts this week!

Today in bullets…

Today I…

  • Made a bank deposit for work
  • Ran a few errands and grabbed some things for Drew’s birthday tomorrow
  • Got home and had lunch
  • Did a load of laundry
  • Watched Smile on Amazon Prime (it was pretty good, but I don’t think it lived up to the initial hype).
  • Got chili started
  • Called my folks and talked to them for a while
  • Finished making dinner (chili dogs and salad)
  • Showered while Drew cleaned up the dishes

… and that’s about it. Right now we’re watching Pretty Little Liars with Laura. Honestly, it felt kind of nice to have a relatively laid back day!

Only the best…

Here at work, the library’s phone system is intertwined with the Town’s phone system and this year they are upgrading everything to VoIP. This is great news because it means that I actually get my very own extension and my very own voicemail.

Today, the phone guy came in to install the new phones and when he handed me this user guide, I nearly burst out laughing:

Ultra Elegant

That’s right, guys. We are a classy library and get the ultra-elegant phone! I would expect nothing less, LOL!

Sunday Snapshots

Well, I tried to take a lot of photos of my day to make up for last week. I got an early start today, as planned. I wanted to get the grocery shopping done nice and early so it didn’t take up my entire day. So I head out before 8 AM and it was cloudy and foggy, especially crossing over the Hudson River.

After hitting up Shop Rite and Aldi, I wanted to grab a few things at Walmart including some flowers for the front steps. Everything looked so pretty, I had to reign myself in!

Untitled

I picked out just a few plants for early spring — I spent less than $10 because once the end of May comes around I know everything will need to be switched up.

Grocery shopping takes forever doesn’t it? Maybe it’s just me — I usually go to 3-4 stores to take advantage of weekly sales, and of course we do have our favorite items. This week was an unplanned stop to Sam’s Club because Walmart inexplicably had no bakery rolls (which is what the kids prefer for school lunches). I definitely got more than we need, but compared to the price at Shop Rite for far fewer, I figured I could freeze what I don’t use or make croutons or something.

The unpacking and organizing is always a chore, isn’t it?

For Christmas a few years ago I got a vacuum sealer and it was such a good investment! It allows me to stock up and the food definitely stays fresher than when I’d use a combo of foil and freezer bags.

I took a quick break to eat something for lunch. I was seriously hangry and snapping at everyone, so I reheated some leftover pizza (adding some olives that were in the fridge) and a big side salad.

Finally! Everything is organized and put away. I prepped potato salad, burgers, and chicken breast for dinner.

Then I potted the pansies and violas I bought.

Pretty simple, but good enough to add some color!

After I came inside and sat down with a cup of tea, Drew asked if I had any interest in going to the movies. We are not typically super spur-of-the-moment, but I did want to see Renfield so we hit the 3 PM screening. I thought it was great! You definitely have to appreciate it for what it is (and there is plenty of over-the-top killings and cranberry juice), but it was a fun way to spend the afternoon.

So all in all it turned out to be a great Sunday! The burgers came out good and for the first potato salad of the season I could have done worse, LOL… No, it was good but needed some salt. The weather had cooled way down, too, so I am hoping to have a better night’s sleep tonight. Still not feeling quite ready for Monday, but I’m hoping for a good week ahead.

I’m going to try to get around to everyone’s blogs this week. I usually stop by on my lunch break but for some reason many of the Blogger  blogs won’t allow me to comment on my work PC, so if I can’t figure that out one night I will make an effort to do it at home. I am definitely following along with everyone, though! I’m sure it’s just a funky permissions setting.

Enjoy the rest of your evening!

Spring Saturday

I just noticed that the titles of my last three posts start with “Spring” so I figure I may as well close out the week with one more!

My posts this week have been a little lacking in the “interesting” department, I know. I haven’t taken many photos and honestly I’m not sure what I’ve been doing, but clearly nothing all that exciting.

Last night was fun, though! A girlfriend and I went out to a new-ish Mexican restaurant nearby. Is there anything better than catching up over tacos and margaritas? I think not!

This morning was spent cleaning up the house, which looked like a bomb went off! I tidied everything up, including a good fridge clean-out. Now it’s ready for fresh groceries tomorrow!

This afternoon Laura and I went to 4PM Mass and of course the skies just opened up like mad as the service ended. Everyone was running to their cars, it was actually kind of comical! We were totally soaked and I’m sure I was quite the sight when I went into the pizzeria to grab our dinner order. Oh well!

Tonight we are just watching movies and being lazy. Hope you all are enjoying your weekend!

Spring Colds

Not much to report today except the heat. Oh my goodness, it got up near 90 today, which is highly unusual for the Hudson Valley at this time of year and definitely not a good thing in the big picture. I feel guilty for enjoying it a little bit 🙁

Other than that it was a typical day… I did get a call from the school nurse and had to pick up Laura who had a headache and sore throat. Lots of spring colds going around.

Grilled steaks for dinner, which were delicious! And that was about it. Almost the weekend!
