With All The Best Intentions

Oh boy, here we are at the end of month again, and so much time has passed without me updating. Why do I let this happen? I really need to make time for my blog, to write things down, to post photos… The days fly by (as evidenced by the fact that yet again a month has passed), and I think it’s important to documents these days! All I can do is try to be better. Maybe set up a blogging time for myself at the end of the day. That might be a nice way to reflect.  Well, let’s just start with the present!

It is, indeed, Monday again. This morning I had to head over to the dealership to get the state inspection done on my car, so now I have my new sticker and I’m good for another year! I also picked up a few groceries while I was out as well as a birthday present for my nephew.

  5. Birthday present for my nephew

Right now I’m trying to get through all 8 Battle of the Books books for this year. I need to write questions about four of them (20 for each book), so that is consuming most of my reading time! Aside from that, I’ve been enjoying Instant Pot cookbooks. 

{ On the TV this week }
Another super busy week, so I don’t know how much TV watching I will get done. I still want to start Altered Carbon and Black Mirror, but I don’t think it will be anytime soon.

{ The weather outside is }
The sun is in and out today, but at least it’s not freezing. We had such a tease of warm weather last week (up near 70!) followed by a day of rain and snow (of course — gotta love the Northeast). I’m so ready for spring, though. It can’t come soon enough.

Monday – Frozen pizza for the kids, leftovers for me
Tuesday – Instant Pot beef stew, salad
Wednesday – Chicken fajitas 
Thursday – Turkey cutlets
Friday –  Tortellini with marinara sauce
Saturday – Instant Pot lemon chicken and orzo
Sunday – ?

Keep working on my River Rock Blanket

{ What I’m sewing, crocheting, knitting or creating }
I started  a new blanket last week using Caron Big Cakes in Peppercream. I love the colors and I love the pattern! I’ve actually restarted it completely since I took this photo, but it gives you the idea. I forgot two rows at the beginning and somehow my stitch count was not correct, so I ripped it back and started fresh. I also went down a hook size and cast on a smaller number of stitches because it was HUGE.  As of today I’m almost done with the first cake.

{ New recipe I tried, or want to try this week }
I purchased an Instant Pot a few weeks ago, so I have been trying so many new recipes and it has been great. Last week I made a batch of copycat Starbucks “sous vide” egg bites. I will post the recipe later this week because I made them a little less rich than many of the recipes I’ve seen. These were bacon and pepperjack and the kids went crazy over them. Delicious!

Last week I was able to find very inexpensive post-Valentine’s Day roses. $5 for a dozen! They were gorgeous and made me so happy.

Well, I supposed I should do a quick clean-up in the kitchen and get ready to start cooking with Noah. Tonight is the middle school “Top Chef” competition and he is entering a recipe for “Picnic Chicken.” Last year he got second place with his recipe for Masterpiece Quiche. I’ll be sure to let you know how he makes out this year!
 

Six More Weeks of Winter

Well, it looks like Punxsutawny Phil saw his shadow this morning, and you know what that means! I can’t say I am surprised, given we woke up to this here in the Hudson Valley:

We also woke up to a power outage (thankfully brief) and a two-hour delay for the schools. Frankly, I was happy with the delay because it made for a more relaxed morning. I made some berry muffins for breakfast, and I also made a banana bread for my co-worker. Last week was his birthday and I had no idea! One time I brought in banana bread and he still talks about how much he enjoyed it, so I decided he can have a loaf all to himself, LOL! (Here is my recipe for banana bread — I always get compliments on it!)

Though I have to say… this year I am really ready for spring. I don’t know what it is, but I’m just over the cold and the mess that comes with the winter season. The floors are constantly dirty from sand and salt. The wood stove, though I love it, does contribute to a lot of dust in the house. And I’m tired of bundling up to go anywhere. How on earth did I do it when the kids were little? I was thinking about that the other day — dressing up squirmy babies and toddlers in snowsuits and boots. Schlepping around the giant infant carrier… It really was so much work! I definitely feel for these frazzled young moms when I see them in the stores with their little ones. It’s not easy.

Well, it is time to get on with my day! TGIF!
