Old-fashioned Apple Crisp

It seems that pumpkin (or pumpkin spice) gets all the attention as the featured fall flavor. But you know what? As much as I love pumpkin, I still adore apple. Apple cider, apple pie, and of course… apple crisp all top my “must make” list for autumn. 

I think this was another recipe I started making while in college (thinking back, I did a lot of cooking in that Amherst apartment). Sure there are more exciting variations on apple crisp. They might call for oats or walnuts or something fancy. But I love the simplicity of this recipe. It never lasts long in my house, and is especially delicious warm and topped with a little vanilla ice cream. Enjoy!

Ingredients
  1. 4 c. sliced apples
  2. 1 tsp. cinnamon
  3. 1/4 c. water
  4. 1/3 c. butter, softened
  5. 1/2 tsp. salt
  6. 3/4 c. flour
  7. 1 c. sugar
Instructions
  1. Pre-heat oven to 350 degrees. Spread the sliced apples evenly in an 8x8 baking dish. Sprinkle the apples with a mixture of water, cinnamon, and salt. Stir together the sugar and flour and then work the butter in, using a fork or a pastry blender. Spread the crumb mixture over the apples and bake uncovered for 40 minutes.

A Perfect Fall Day

I’d be hard-pressed to choose a better month: May or October. They’re both my favorites. Yesterday some stormed ushered in the most wonderful, cool, fall weather. And finally, finally, finally I was ready to open up that pumpkin spice coffee creamer 🙂

After getting Noah on the school bus this morning I decided to snap a few photos. The rain brought down a lot of leaves, but really the colors are just starting to show up. I’m hoping that they’ll pop in the next few days. Saturday we’re having a family portrait taken and I would be thrilled to have some brilliant color in the background. Anyway, here are just a couple shots from the yard.

In the meantime I’ve been puttering around, doing some detailed cleaning. Boy, are those circular knobs that are grooved a pain to clean? We have them on some cupboards and somehow there’s always something stuck in the grooves. I also caught up on laundry — hooray!

Tonight I think I’m making a simple Western frittata for dinner with a salad. Maybe I’ll throw an apple crisp together, too… just because I feel like a bowl of some apple-y dessert and a cup of hot tea would be the perfect way to end to the day. Might have to get peeling those apples now!

An October Hello

Well, somehow I thought that with Laura in preschool three days a week, I’d have all this extra time to blog, work on projects, etc. I don’t know what happened, but that certainly isn’t the case! I feel like I’ve been going nonstop (in a good way!) since school started last month.

I’m not going to make excuses. Instead I’m just popping in to say hello and share a photo of a woodland friend who decided to visit this afternoon. It’s been a beautiful fall so far this year and although today is dreary and sprinkly, we very much need the rain.

This morning I worked, and I just finished prepping dinner so when we get home from church tonight I can heat it all up without fuss. I am SO looking forward to lemon chicken, mashed potatoes, asparagus, and salad. I am also (shocker) kind of looking forward to church. We have a new priest as of August 1st. I didn’t exactly connect with our last priest, but this new one? He is very much down-to-earth, which I appreciate. So we’ve been making an effort to try to go every week. I prefer 5 PM Mass on Saturdays, so that’s our plan for tonight.

After the kids are in bed, we will probably just watch a show and relax. I’m still recovering from a cold, so I should try to get to bed early. Tomorrow I think Drew’s mom and aunt are coming up for lunch, and I am hoping to get some crochet time in. I have not picked up my hook in months and oh — I miss it!
